Making healthy dinners shouldn’t have to be hard or expensive. And it isn’t when you have an easy, go-to recipe.
This month, January, I am pushing myself to cook more. I love the easy frozen meal (Amy’s!) or a quick takeout from a nearby healthy restaurant. However, both of these options get expensive, and I am trying to save more money this year.
My goal is to make three-four different sides every week. This way I can have leftovers, and just switch up the protein/add different veggies to each meal. I love using Hilary’s Garden Burgers (SO good!) or Boca Burgers as a side. All of Hilary’s products contain no eggs, corn, dairy, soy or nuts. They are also gluten-free and do not contain any GMOs.
For tonight’s side, I made Oven Roasted (Red) Potatoes. These were delicious, SO easy to make, and very inexpensive! 🙂
I mean, how good do they look? Not bad for my first time! 😉
I bought a three-pound bag at Kroger for about $3.00. I then added spices and olive oil. Because I only had to purchase the potatoes, the entire side (for six different meals) only cost $3.00!
- A 3-pound bag of red potatoes
- 2 tbsp of olive oil
- kosher salt to taste
- 1 tbsp parsley (fresh or dried)
- 1/2 tsp pepper
- 1/2 tsp cajun seasoning
- Preheat the oven to 450
- Wash and cut potatoes
- Put the potatoes, spices (besides salt) and olive oil into a zip-lock bag
- Shake the bag until all potatoes are coated evenly
- Place potatoes on a foil-covered baking sheet
- Sprinkle with salt
- Place in the oven for about 30-40 minutes, or until slightly brown
Enjoy! Makes about six servings.
